ROCOTO stuffed with smoked giant squid
Ingredients:
- 3 large rocotos
- 1 medium onion 100g approx
- 1/2 tomato
- 4 cloves of garlic
- 1 tablespoon of special chili
- 1 tablespoon ground peanuts
- Pepper
- Cumin
- Salt
- 1 can of NATURAL FISH SMOKED GIANT SQUID PIECES
Preparation:
We remove the caps from the large rocotos, then remove the veins and soak them in boiling water, vinegar and sugar to remove the sting.
Sauté the onion and garlic, when the onion is transparent, add the special chili, cook for 5 minutes, add the tomato and ground peanuts, wait 5 more minutes and finish with the smoked giant squid, when we have the pasta ready, season to taste and fill the rocotos.
